The nose is deep, intense, starting with red and black fruit, woody fruit. Spicy base, bay leaf, clove; toasted wood, smoked.
Elegant, fine, with fruity memories: cherries, plums. Memories of must. Balanced palate, with well-integrated tannin without harshness. Long finish with a marked aftertaste of fruit in compote.

José Manuel is the alma mater of this winery where the entire process is carried out with great care and attention throughout the entire process from harvest to bottling.
Old vineyards of 40 and 70 years. Quartzite soils of volcanic and clay-calcareous origin. Dry farming and sustainable production. Cluster thinning. Average production 700 grams per vine or 1,120 kg per hectare. Manual harvest in boxes at dawn. Gentle destemming without squeezing. Manual selection of grapes.
Pre-fermentation maceration at 2º for 5 days. Alcoholic fermentation at 25º. Aged in new French oak barrels for 14 months, with a personalized toast.
Limited and numbered production.
