The journey from barley grain to bottle consists of five critical steps that define the final quality of the spirit:
- Malting (Malting): The barley is soaked in water to germinate and release sugars. The process is halted by drying the grain in kilns. If peat (peat) is burned during this drying, the whisky acquires its classic smoky aroma.
- Mashing (Mashing): The dried grain is ground and mixed with hot water in a tank called a Mash Tun to extract a sweet liquid called Wort.
- Fermentation (Fermentation): The liquid is transferred to large vats (Washbacks) and yeast is added. After about 48-72 hours, a kind of sour beer of about 8% ABV called Wash is obtained.
- Distillation (Distillation): It is always carried out in copper stills in batches. The first distillation raises the alcohol to 20-25%, and the second refines it to a clean and clear liquid of approximately 70% ABV (New Make).
